Recipe: Gut-Healing Turkey Tail Pancakes with Chestnut Flour (GF, DF)

A note: This recipe uses pure chestnut flour as its base, which is denser than white flour (aka, denser in nutrients). The pancakes will still be "fluffy," but this is more comparable to a dense, slightly sweet and nutty wheat bread. 

Ingredients (makes 4 pancakes):

- 1/4 cup chestnut flour
- 2 eggs
- 1 tsp Organic Turkey Tail Mushroom Powder
- 1 tbsp extra-virgin olive oil (plus extra for the pan)
-1-2 tbsp water or almond milk
- Dash of cinnamon (optional)
- Raw honey or maple syrup for drizzling, plus berries (optional)

Instructions:

1. Preheat a cast iron pan with a drizzle of olive oil.
2. Blend chestnut flour, Organic Turkey Tail Mushroom Powder, and cinnamon in a bowl. Then, add eggs, 1 tbsp extra-virgin olive oil, and 1-2 tbsp water or almond milk.
3. Combine until a batter is formed. You may need to add a small amount of water or almond milk (1 tbsp at a time) to reach this consistency).
4. Dole batter onto the cast iron and con until bubbles form on top; then flip and cook for 60 seconds. Remove, and repeat.
5. Drizzle with raw honey or maple syrup, and top with berries.
