Adaptogenic Spiced Banana Bread for Focus & Energy

  • 1 3/4 cup all purpose organic flour
  • 3/4 cup organic brown sugar
  • 1 Tbsp Lion’s Mane Cosmic Creamer
  • 1/2 teaspoon salt
  • 2 teaspoon baking powder
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon cloves
  • ¼ teaspoon ginger
  • 1-2 Tbsp chopped dark chocolate (optional)
  • 1 ½ cups mashed banana 3 or 4 medium over ripe bananas
  • 2 large eggs
  • 1/2 cup cold-pressed coconut oil
  • 1 tablespoon vanilla extract

Instructions 

  • Preheat oven to 350°F and grease a 9x5-inch loaf pan with oil.
  • In a large bowl, combine all of the dry ingredients (flour, sugar, salt, baking powder, and spices). Whisk until well combined.
  • In a separate bowl, peel and mash the bananas. Then add the eggs, coconut oil, and vanilla extract and whisk until well combined.
  • Pour the wet ingredients into the dry ingredients and stir together.
  • Pour the batter into the prepared loaf pan.  Top with chopped chocolate, if using. Bake at 350°F for 55-65 minutes, until a tester comes out with moist crumbs.
  • Remove baked loaf from the pan and transfer to a cooling rack.
